Crisp Thin Onion Rings

Peel 2 large Bermuda or Spanish onions and slice ¼” thick. Separate into rings. Soak in ice water for 2 hours. Drain and dry thoroughly. Dip in the following batter. 1 cup all purpose flour, 1 teaspoon baking powder, 1 cup milk, ½ teaspoon salt, 1 slightly beaten egg. Fry in hot deep fat fryer (370°) until browned. Drain on absorbent paper. Eat at once. If not, place in moderate oven (375°) for 10 minutes or until crisp. Serves 4.
