California Chicken Potato Salad

Holiday Recipe Guide 2009

12 med red potatoes

1 white onion

1 C walnuts

1 C grapes

2 C mayo

¼ C honey

1 lb chicken breast

Salt and pepper to taste

Cook potatoes until tender, set aside and cool. Dice the onion into small pieces, cut the grapes into 4 pieces. Dice the chicken into small cubes, place on the stove and boil until it’s done. Drain and cool. After potatoes and chicken have completely cooled, mix all ingredients together. Place in covered bowl in the refrigerator for about an hour.
