Breakfast Potato Skillet
Holiday Recipe Guide 2009

5 med potatoes, sliced or diced
1 C onion, chopped
1 C fresh mushrooms, sliced
1 C pepper (green, red or yellow)
2 C cooked ham, cubes
1 C broccoli buds
1½ C cheese, cheddar or jack
1 tsp salt
1 tsp pepper
1 tsp garlic salt
1½ tsp Italian seasoning
Precook potatoes with skin on in microwave for about 5-6 minutes, cool and cut up. Heat 3 tablespoons oil in large skillet. Cook potatoes and onions until potatoes are slightly brown. Add mushrooms, peppers and ham. Cook together slowly about 15 minutes. Add seasonings. Add broccoli buds and cover skillet, cooking for 2-3 minutes until done. Do not over cook at this point. Add cheese until just melted. Serve immediately.
