Mushroom and Spinach Stir Fry
Serves: 4
Prep Time: 6 minutes
1 pouch Uncle Ben’s Ready Rice Whole Grain Brown
3/4 pound chicken breast cut into bite size pieces
2 tablespoons lite soy sauce
1 box frozen spinach (10 ounces) thawed and drained
4 ounces sliced fresh mushrooms
1 tablespoon oil
Heat rice in microwave according to package directions.
In a skillet, heat oil over medium high. Sauté chicken for 5 minutes or until completely cooked.
Add mushrooms and spinach to the skillet, cook 2 minutes. Stir in soy sauce and serve over rice.
Tips
Add beef, shrimp or chicken for extra protein.
