Mincemeat Filled Cookies

2½ C sifted flour
½ C shortening
1 tsp baking powder
½ tsp salt
2 T water
1 C sugar
2 eggs
1 tsp vanilla
¼ tsp nutmeg
28 oz jar of mincemeat
Cream the sugar, shortening and eggs. Add the water and vanilla, mix well. Add the flour, baking powder, salt and nutmeg. Mix well. Shape the dough into a ball, wrap and refrigerate for 2-3 hours. Roll half the dough to 1/16” thick, (keep unused portion in the frig) cut into 3” rounds. Place 1 tablespoon of mincemeat in center of one cookie. Top with another one and seal edges together. Bake for 10-12 minutes on a lightly greased cookie sheet at 400°. Edges should be lightly browned.
