Holiday Recipe Guide 2009

Frances Frerichs, Gurley, NE

2 eggs

2 C sugar

½ C vegetable oil

1 tsp vanilla

2 C all-purpose flour

½ tsp salt

4 C diced, peeled apples

1 tsp baking soda

2 tsp cinnamon

¼ tsp nutmeg

1 C nuts

Beat eggs until light and fluffy. Gradually add sugar, oil and vanilla. Sift together flour, salt, soda, cinnamon and nutmeg. Add to first mixture. Add apples and nuts. Put in greased 13×9 pan. Bake at 350° for 45 minutes and frost.

Frosting

3 oz cream cheese, softened

3 T butter, softened

Pinch of salt

½ tsp vanilla

1½ C confectioners sugar

Mix until smooth.
