Potato Pancakes

4 lg peeled, rinsed and shredded potatoes
2 beaten eggs
⅓ C flour
2 tsp salt
⅛ tsp pepper
Mix egg with potatoes. Add the flour, salt and pepper and mix well. Heat oil in skillet, drop potatoes in ¼ cup rounds. Cook until golden brown on one side. Turn and brown on other side. May add 1 small grated onion to the potatoes.
